Working Mom Meal Prep Tips

Between working full time, parenting two little kids, and my gym schedule, I don’t have much time to cook elaborate meals.

If this sounds like you, I’m here to tell you that it is OKAY. You can still eat a healthy, balanced diet while taking some shortcuts in the kitchen.

Here are a few tips that help me stay on track with my nutrition, even when my schedule is insanely busy.

I meal prep on the weekends.

Meal prep is a lifesaver when you’re juggling multiple schedules. I try my best to prep veggies and protein every Sunday.

I’ll bake a large tray of Costco chicken breast, wash, cut and cook veggies, and hard-boil eggs. It saves me so much time having these items ready before the week begins.

For those who have asked, my favorite meal prep containers are these ones by Rubbermaid: they’re leak-proof, non-staining, and microwaveable. I also love Stasher bags. They’re a bit expensive but 100% worth the investment.

I frequently choose frozen options.

Frozen and processed foods get a bad rap, but as long as they’re close to their natural state and not full of extra fat and carbs, they’re a perfectly fine substitute for fresh.

I buy a lot of frozen vegetables, berries, and meats like chicken sausages and salmon burgers.

I keep my meals very simple.

Most of my meals are super basic: protein, vegetables, and fruit on the side. I’ll admit they can be a little boring if you don’t lean on sauces and spices to jazz them up.

I use a lot of spices in my dishes: low-carb taco seasoning, garlic salt, Montreal steak seasoning, cinnamon, onion powder, etc. I also love low-sugar sauces like mustard, horseradish, hot sauce, BBQ sauce by G. Hughes, and salad dressings by Skinny Girl.
